what i eat in a day

Realistic, Relatable & Simple

There’s something comforting about routines — the way they quietly carry us through the noise of everyday life. Food is one of those rituals that grounds me. But when you’re working full-time, it can easily become something rushed, secondary, even stressful.

This post isn’t about perfect nutrition or curated meals. It’s about what I actually eat in a day — realistically, with limited time and energy. It’s about choosing what’s good enough, what feels nourishing, and what makes sense in the moment.

Morning: Avocado Toast with a Twist

My day almost always starts with coffee and quiet — then breakfast.
I’ve been making some version of this avocado toast for months. It’s a soft routine I never get tired of. Toasted bred, a layer of cream cheese, ripe avocado, flaky salt, pepper, chili flakes, and an egg on top. It takes less than ten minutes and keeps me full until lunch.
Sometimes I’ll add arugula, different herbs or lemon zest if there’s time, but often I just keep it simple.

Midday: Quick Rice Salad with Sesame Tofu

Lunch tends to happen late — squeezed between meetings, emails, and whatever else the workday brings. I try to make something fresh and simple that doesn’t take too long. HelloFresh has been the perfect support for that kind of rhythm. (Ad / Not paid)

One of my current go-to recipes is this Vietnamese-style rice salad with sesame tofu — full of flavor, fresh textures, and done in around 15 minutes. I made it fresh at home, served it warm, and stored the rest for the next day at the office.

The dish combines jasmine rice, marinated sesame tofu, crunchy vegetables, herbs, and a light soy-sweet chili dressing. It’s filling without being heavy, and the leftovers keep well — which is perfect for busy workdays.

Evening: Burger Salad Bowl

Evenings are when I crave something comforting but light — something that feels like real food without much effort. That’s where HelloFresh helps me out once again. (Ad / Not paid)

This Cheese Burger Bowl has been one of my favorite weeknight dinners lately. It’s everything you love about a burger — just lighter and faster. A base of crisp lettuce, cucumber, seasoned ground beef, red onions, cheese, and a tangy burger-style sauce. Topped with bred crunch. No heavy bun, no long prep — just the good stuff in a bowl.

I made it fresh after work and served it warm. Simple, satisfying, and done in around 20 minutes.

Hydration: Always, but with a Little Twist

I drink a lot of water, but sometimes I want something with a little more flavor. That’s where Waterdrop comes in. It’s sugar-free, comes in beautiful packaging, and adds just enough taste to make hydration feel special. I keep a few in my bag and always have some at my desk.

The Everyday Tools That Help

I’ve been using Hello Fresh (ad, not paid) on and off for a while now. Their 15-minute recipes with pre-prepped ingredients are genuinely helpful during busy weeks. It’s not always possible to cook from scratch — this is the in-between I’m okay with.

This isn’t a guide to eating perfectly. It’s just what works for me— most days. Sometimes I snack too much, sometimes I skip a meal, sometimes dinner is a basic toast. That’s okay. Food should fit around life, not the other way around.

Thank you for being here

Waves of love, always.
